Looking for inspiration for this blog post, I thought a trip to Alexandria for their mid-week farmers market would be nice. And it was. Harris graciously drove (and found that Debbie’s seafood pie was oh so very good). The market’s on Tuesdays from 3-6 pm at 2727 Jackson St. Check it out sometime!

I found okra, peppers and the most beautiful chestnut mushrooms. The mushrooms for another post.

So it’s the preseason … go Saints! And this week is the start of college football (cheer here for your favorite team!) And instead of the usual chips, I wanted a yummy snack food that’s easy on the carbs. Not a fan of the slime? None here!!

Crispy Okra with Bacon Jam

This recipe will be your new low carb snack option. Easy to make, delicious and no slime! Gluten free, paleo friendly.
prep time: 10 Mcook time: 30 Mtotal time: 40 M

ingredients:

  • 1 lb. okra, sliced lengthwise
  • 3 tbsp olive oil
  • Seasoning of your choice
  • 8 oz. bacon, chopped
  • 1 medium onion, chopped
  • 2 tbsp Steen’s Syrup or honey
  • Seasoning

instructions:

How to cook Crispy Okra with Bacon Jam

  1. Preheat the oven to 400 degrees F.
  2. Toss the okra in a bowl with olive oil and seasoning. Spread onto a rimmed baking sheet in a single layer. Roast for 20 minutes, stirring and turning after 10 minutes. Roast for 10 minutes more until it’s how you like it.
  3. Meanwhile make the bacon jam. In a 12-inch skillet, add the bacon over medium high heat. Once the bacon fat has begun to render, add the onion. Reduce the heat to medium. Cook until the onion is soft. Add the syrup or honey and season to taste.
  4. Use the bacon jam as a dip for the okra or put the okra on a large platter and drizzle the jam over top. Enjoy!
