When life (or Louisiana) gives you figs and pecans, make this fabulous salad: crunchy pecans, luscious figs, creamy goat cheese, salty prosciutto and crisp lettuce, plus a drizzle of olive oil and white balsamic vinegar for dressing. It’s low carb and keto, too!!
Fig, Prosciutto & Goat Cheese Salad

Ingredients
4 oz fresh figs halved
4 oz salad greens
1/2 cup pecans toasted
3 oz prosciutto
4 oz goat cheese, crumbled
4 olive oil
1 balsamic vinegar
salt and pepper
Instructions
Heat a dry, 12-inch nonstick skillet over medium heat. Add figs, cut side down. Cook for 3-4 minutes to release sugars and flavor. Remove from skillet and set aside.
Place salad greens on individual plates or serving platter. Add figs, pecans, prosciutto and goat cheese. Sprinkle with salt and pepper. Drizzle with olive oil and balsamic vinegar.
