Ghee is clarified butter that’s actually dairy free because all the milk solids are removed. It’s a staple of Indian cooking and loved for its nutty taste and the fact that it doesn’t burn like butter. I always have a jar of homemade ghee in the fridge. It’s great for all kinds of sautéing when you want more flavor than plain oils can deliver. And making it yourself saves a lot of money. Jarred ghees cost anywhere from $6-12 for 8-12 oz. But you can make 12 oz. for the price of a pound of unsalted butter.

I make a variation of ghee that’s sublime the moment it hits the pan and starts to melt. I simply add some chopped onion, celery, bell pepper and garlic to the low-and-slow cooking butter. It’s simple to make, too. Have you ever used ghee? What did you think? Let us know in the comments below!

Cajun Country Ghee

One pound of butter plus the trinity and you've got a party started as soon as it hits the pan!

ingredients:

  • 1 medium onion, cut into large chunks
  • 2 stalks celery, cut into 2-3 pieces
  • 1 medium bell pepper, cut into large chunks
  • 2 cloves garlic, smashed and peeled
  • 1 lb. unsalted butter

instructions:

How to cook Cajun Country Ghee

  1. Place all ingredients in a Dutch oven or 2-quart pyrex cup. Place in 250 degree F. oven for 2 1/2-3 hours. Remove from oven let cool for 10 minutes.
  2. With a slotted spoon, remove solids and vegetables. Strain through fine mesh strainer into a 12-16 oz. glass jar, stopping just before the milky residue reaches the lip of the pan. Let cool to room temperature. Cap and store in the refrigerator.
