Almost Instant Chicken Salsa Soup

Soup making is a satisfying cooking venture—chopping, brewing stock, simmering, tasting. Soup is also comforting, nutritious and tastes wonderful. I think Harris would rather eat soup than just about anything else. He’s got smoked duck and andouille gumbo on the stove as I write this. Or should I say he’s got the duck bones cooking for the broth. The rest of the recipe is for later today.

But maybe you don’t have hours to devote to a potage. You want a something soon. You need lunches for work. We’ve made this soup scores of times and it never disappoints. I think you’ll really like it..

Years ago I was, for a time, a private chef. One of my clients and dear friend, Elizabeth, brought this soup to her office and heated it up in the microwave.
