Strawberry Mousse

Fresh, seasonal fruit and a few simple ingredients. Keto dessert joy!

ingredients:

  • 1/4 cup red wine or pomegranate juice
  • 1 packet unflavored gelatin
  • 16 ounces strawberries leaves trimmed, cut into quarters
  • 1/2 cup heavy cream
  • 3 tbsp Swerve or other granulated sugar substitute

instructions:

How to cook Strawberry Mousse

  1. In a small bowl, add red wine and gelatin, stir and let gelatin soften for five minutes.
  2. In blender jar or bowl of food processor, add all ingredients. Purée until smooth. Divide into four serving dishes. Chill until firm, about two hours.
