Why is it that the foods we love and crave the most are the ones we know we should avoid most of the time? In an alternate universe, fried chicken and dessert would be medicine and kale would be off limits. But we live here and we’ll deal with it.

This chicken recipe gives you the crunch and crisp of fried chicken without the carb-heavy coating. And there’s no added fat, just what the chicken already has. Two ingredients and ready in about 20 minutes, it’s faster than take out. The meat is juicy and succulent, too.

Cracklin’s are a Louisiana favorite and if you follow low carb, keto and/or paleo, they’re our “pig candy.” But you gotta have supper, too, and this recipe gives you both.
